Easy Southern Pan Fried Chicken Recipe

Ask 10 different people (with southern roots) how to cook fried chicken and you’ll probably get 10 different answers. Some use an egg wash while others don’t. Some put a cover on the frying pan while the chicken fries while others don’t. The truth is that we’re all right, because it’s based on how you like your final chicken prepared. I have used an egg wash. It makes the chicken have a thicker, crispy batter but honestly, it doesn’t make that much of a difference so I usually skip it. I have also fried chicken with a cover on top. It does make the chicken a little bit more tender and juicy. I like my chicken crispy on the outside and juicy on the inside though, so I usually cook my fried chicken uncovered. In any event, my family and friends enjoy this special treat. I hope that yours will too!

5 Places to Celebrate National Grilled Cheese Day in NYC

National Grilled Cheese Day is today (April 12th). Buttery and crispy on the outside while melted and gooey on the inside –it’s no wonder that grilled cheese sandwiched are being celebrated! I have a confession to make: While writing this post yesterday, I took a quick detour to the kitchen and made a grilled cheese sandwich. I had not eaten one in a while…it was SO good!

Anyway, there was a time that grilled cheese was one of the few meals that my youngest son Sean would eat. (Thankfully, his tastes have expanded.) Grilled cheese is so simple to make, so I actually miss those days. All I needed to do was butter the outsides of 2 slices of bread, put some grated cheese in the middle and toss it on our grill for a few minutes. While a basic grilled cheese sandwich is easy to make, you can turn it up a notch depending on the breads, types of cheeses and add-ons that you use. There are several restaurants in NYC that do just that and turn this easy comfort food into something extraordinary. Below are my top picks:

Personal favorites

1. Artisinal (at 32nd and Park): If you like a variety of artisanal cheeses, this is the perfect spot for you. I went to Artisinal to meet some people for a business lunch. I remember that the business part didn’t work out so well, but “the big cheese” sandwich was amazing. (I’ll take that!)

2. Big Daddy’s Restaurant (Upper East Side, Upper West Side and Grammercy Park): When I attended the Comfort Classics at New Taste of the Upper West back in 2011, Big Daddy’s grilled cheese pushed me to the “I can’t eat any more” point.

Vermont cheddar, American & Swiss, on thick hand cut marble rye. (You can also add bacon & tomato.)

Also noteworthy

3. Chelsea’s Table (Chelsea Piers): If organic, natural and family friendly are three things that are important to you, then give this café a try. Their grilled cheese is made with Vermont-raised, hormone-free cheddar and served on freshly baked organic flatbread.

4. Milk Truck Grilled Cheese (various truck locations in Manhattan and outdoor markets in Brooklyn): When “grilled cheese” is in the title, it leads to great expectations. Fortunately, Milk Truck offers a variety of delicious combinations for the cheese connoisseur. Be sure to check their site for various locations and the menu for the week.

5. The Royal (Union Square): This upscale sports restaurant is celebrated for its gluten-free mac and cheese, but the grilled cheese is also a great option.

Coleman Family’s Review of Guy’s American Kitchen and Bar

As I mentioned in the Peanut Butter Caramel 3-in-1 Sauce Recipe post, the kids and I recently went on a media visit to Guy Fieri’s midtown NYC restaurant, Guy’s American Kitchen and Bar. The Times Square area restaurant opened in October of 2012 and recently introduced a new kids menu with healthier choices.

Since the kids’ meals were the main point of the visit, I told Sean (9) and Sean (6) that they would be my “junior reviewers”. I had no ideas how seriously they would take their job. “So, what do you want us to judge them on?” Michael asked. (It turns out that the kids have been playing Papa’s Burgeria on Coolmath-Games.com. In the game, you are scored based on customer service and burger preparation.) To keep it simple, I told them to just let me know what they thought about the service and the food. Our thoughts…

Service:

The service was quick, friendly and helpful. It helps that we went on a Thursday at 2:30pm – not at peak time. The place is huge, but (as a former waitress) I still like to go to restaurants before or after rush hours. Also, as I told the kids, it WAS a media visit. While waitresses are usually friendly and helpful, I let the boys know that normally the manger, general manager and chef don’t come to each visitor’s table to chat. (The boys want to test me on this though…)

Food:

Kids Meals

The kids’ meal options were a good mix of healthy and typical kid-friendly meals (cheeseburgers, chicken tenders and mac n cheese). I especially appreciated that they make everything on the kids’ menu from scratch except for the pasta. The healthy options included a veggie burger, grilled chicken tender salad, spaghetti and turkey meatballs, a grilled chicken quesadilla and the fruit kabob with peanut butter caramel. Everything (with the exception of the kabob which was $6) was priced at $12.50. The price included fries or carrots and celery sticks or green apple wedges.

Michael humored me and ordered from the kids’ menu, since he normally likes to order from the main/adult menu. He had the grilled chicken quesadilla. He enjoyed it…and I found a new dinner to make at home. While we have done taco night many times, I have never prepared quesadillas. I grill chicken often, so I just need to add shredded Mexican cheese blend and whole-wheat tortillas. Score!

Sean tried the mac n cheese. He didn’t especially like the top layer because it had a crunchy cheese cracker topping, but he liked the softer, cheesy elbow macaroni underneath. (Michael liked the mac n cheese leftovers.)

We all shared the fruit kabobs with the peanut butter caramel as dessert. I had forgotten how much kids like to dip things! Normally, it’s a hassle to get Sean to eat fruits besides grapes and oranges, but he was dipping those green apples into the sauce like they were his favorite fruit ever. I’ll take it.

Main Menu

Of course, I didn’t just sit there and watch the kids eat. I had lunch too. I asked both the waitress and the chef (at separate times) what I should order. The waitress picked Sashimi Tacos for an appetizer, the Pulled Pork Slyder Plate for a sandwich or Cedar Plank Salmon with Jalapeno Apricot Jam as an entrée. Meanwhile, the chef recommended Sashimi Tacos for an appetizer, Unyawns Cajun Chicken Ciabatta for a sandwich or Motley Que Ribs as an entrée. I ended up choosing the waitress’ picks.

The Sashimi Tacos were amazing. I have texture “issues”, so I was happy that the crispy wonton tacos balanced out the soft tuna. The mango salsa and other flavorings were the perfect additions. I let Michael try one of the tacos, since sushi is one of his favorite foods. His thoughts: “This is better than sushi! It’s like heaven on a plate.” (Yet, when the chef asked him how it was, he gave a 1-word answer: “Good”. Oh, well…)

The Pulled Pork Slyder plate was also really great. The pulled pork was tender and juicy. The bourbon brown sugar BBQ sauce was a bit too sweet for me, but the coleslaw and bacon (mmm…bacon) that it was served with brought it down to my preferred taste. (I only like sliders/sandwiches with a little sweetness.) Michael also enjoyed the dish. What can I say? He’s a little foodie!

In any event, we all enjoyed our lunch at Guy’s American Kitchen and Bar. Because we live in NYC, Times Square isn’t the first area that I would think of going to visit for a restaurant meal. However, it’s a great option for tourists and for locals who happen to be in the neighborhood. For instance, Toys R Us – a kid favorite – is less than 2 blocks away from the restaurant. (We actually ended up paying that store a visit after our lunch since both boys wanted to see what they could get with their birthday gift money.) Family friendly theater shows (i.e. Matilda is opening across the street from the restaurant) are other nearby options.

We will return. I walked away from lunch saying, “I’m inspired to make some of the dishes from the menu.” Michael countered, “I’m inspired to EAT some more of their dishes.” Meanwhile, Sean insisted, “We have to go back and take Daddy. He would like it.” I think that your family would enjoy Guy’s restaurant also.

The topic of “smoothies” came up a couple of times in conversation last week. In one instance, I was chatting with my friends Nancy and Amy at Jennie’s book launch party. I was mentioning how Amy had inspired me with her “fit by 40” quest. Everyone has different methods and systems that work for them. I’m a minimalist though, so I try to keep things as simple as possible. I find that when I have a smoothie for breakfast and a soup/stew for lunch, then it allows me to be a bit freer with my main third meal of the day. I know that there is a lot of talk about “quick and easy” items not being healthy for you, but that’s a generalization. Smoothies are quick, easy…and healthy. Just don’t forget to add some protein to the meal. (The protein powder is easiest to include in the smoothies, but I prefer munching on some leftover chicken or turkey with my smoothie instead.)

Anyway, spring is here and it finally feels like it in NYC. (Yes!) Along with the warmer temperatures, I love all of the seasonal fruits and vegetables that are available during this season. I was especially pleased to find that many of my favorite smoothie ingredients (mango, pineapple, spinach and strawberry) were included in the What’s in Season? post about spring fruits and vegetables on Oprah.com. “Homemade with Love” NYC Book Launch Event

I have already raved about my friend Jennifer (Jennie) Perillo’s new book (Homemade with Love: Simple Scratch Cooking from In Jennie’s Kitchen) and shared my favorite recipe from the book. Earlier today, I attended a media book launch event at Jennie’s home in Brooklyn. It was so wonderful to catch up with so many of my friends whom I have known for many years (Beth, Isabel and Nicole) thanks to blogging. We are all doing our different things, so it takes something (or someone!) pretty special in order for us all to be together. It was also great to connect with several other blogging friends that I have grown to know throughout the years (Amy, Beth Rosen, Cristie, Jessica, Monica and Nancy).

Besides the great conversation, Jennie cooked some amazing food! I especially enjoyed the homemade cheese crackers and the vegetarian meatballs. I can’t wait to try those recipes from Jennie’s book. (I’m not anywhere near being a vegetarian but those lentil-ricotta meatballs were some of the best meatballs that I have ever tasted!)
